This Ginger & Sweet Red Chili Shrimp, is a very authentic tasting Thai dish, yet it’s easy to make and you can find all the ingredients at most supermarkets. The flavor comes from lots of fresh ginger and garlic, and of course, one of the best bottled sauces you can have in your kitchen
Ingredients:
- 12 large shrimp (or prawns), shelled and deveined (leave tails on)
- 12 large scallops
- 3 tbsp ABC Sweet Chili Sauce
- 3 tbsp ABC Salty Soy Sauce
- 3 tbsp Bali’s Best Sweet Soy Sauce
- 1 tbsp honey
- 4 mint sprigs (for garnish)
- 4 skewers (lemon grass stalks preferred)
Directions:
- In a bowl, mix ABC Sweet Chili, ABC Salty Soy Sauce and Bali’s Best Sweet Soy Sauce. Add shrimp (or prawns) and scallops and cover, marinating for at least 15 minutes. Thread the shrimp and scallops onto the skewers and grill, turning often and basting with the marinade for 5 minutes or until fully cooked. Garnish with sprigs of mint and serve.
